Egg shortage induced by avian flu stresses restaurants & prisons |

If it can, the Pennsylvania Department of Corrections is going to keep serving eggs in state prisons. But with a devastating avian flu lowering egg production and its raising prices across the nation, the department has made plans to swap in substitutes. That is especially important for an institution that spent $5 million a year on eggs and egg products. Earlier this month, employees and inmates were informed “about the possibility of a decrease in egg and egg product availability on our menus,” department spokeswoman Susan McNaughton said Wednesday. “We continue to serve inmates eggs and egg products as they are available,” she said. “Should the need arise, we have plans in place to change certain egg-related menu items. For example, egg salad may be replaced with sloppy joes; hard cooked eggs are changed to peanut butter; scrambled eggs are replaced with pancakes or cheese grits.” Read More. |
