Washington State- Inside the Clallam Bay Correctional Center, about an hour west of Port Angeles, nearly 900 inmates are fed breakfast, lunch and dinner every day. "Dinner is some watery sauce, sometimes it's the consistency of snot. Just saying, the chicken chow mein last night was horrible. I don't think anyone in here would agree that they liked that meal," says offender Tye Sibley, who is doing 25 months for stealing a car and possession of a controlled substance. But deep inside the prison, through many locked gates, is a bakery where a select group of inmates are rolling out pie dough, mixing up batches of chewy chocolate chip cookies and learning French pastry techniques.
