Tuna Ramen Delight and other recipes prisoners concoct in their cells

As you can probably imagine, prison food is not super delicious. Nick Southard knows. He is serving a 63 month sentence at the Clallam Bay Correctional Center.

"We get noodles and rice pretty much every night with the same kind of really watery sauce with little chunks of like, I think, chicken in it. It's disgusting. Water and salt is what it tastes like. You see a lot of it getting thrown away because it's so bad."

Dayle Lee teaches a baking class to inmates in the prison.

"One of the primary things that people complain about, offenders, that there are uprisings and even riots about, is over the food. The Department of Corrections is not a food service organization. But it's nutritious, it's analyzed for nutrition, and it's food. What can I say?"
