| Union: Ill. Prison Kitchens Understaffed |

The union that represents most workers in Illinois prisons says prison kitchens are dangerously understaffed. Henry Bayer of the American Federation of State, County and Municipal Employees says in one case an employee had to work five double shifts in a row to make sure all meals were delivered. The state hasn't hired a kitchen supervisor in any state prison since September 2001. Officials say there currently about 146 vacancies in the 550 dietary positions at prisons around the state. In some cases, prison officers have been assigned to kitchen duty to cover unfilled shifts. Corrections Department spokesman Sergio Molina says the staffing problems are a concern, but he says he's not aware of any security problems caused by them. He says it's a testament to the diligence of the staff that is on hand. |
